This is my first post on the blog, and I liked to start up with recipe of a sweet.
It had been just a month after our arrival to America, and came the Shivaratri festival and I was quite exited about its celebration. Since we were new to the place, and there was a lack of the basic Indian groceries, I thought to experiment with this simpler version of kheer. Here comes the
recipe;
Ingredients: (serves 2)
Apple-1
Milk-2-21/2 cups
Sugar-2-3 t-spoons
cardamom powder-for taste.
Small bits of cashew nuts and raisins-as required.
Ghee-3 Tb-spoon.
Method:
- Clean the apple and grate it.
- heat the ghee and roast the cashew and raisins, keep aside.
- Boil the milk until it gets reduced to 3/4.
- Start to saute the apple gratings with ghee until they turn brown-red in colour. Add the sugar and saute further until the sugar melts.
- Add the still hot milk, roasted dry fruits, cardamom powder and mix well.
- Stir until the required consistency of kheer is reached.
- Once cooled to room temperature keep it in a refrigerator for 1 hour.
- A slight curdling can occur which in fact adds to the taste of the dish.
- Rose essence goes very well with the kheer and compliments to its taste.
- Saffron can be added to make it extra rich.
